If you are trying to eat fewer eggs, as well as other animal foods, by 2023, we have good news for you. There is a recipe, suggested by BBC Good Food magazine, that teaches you how to replace scrambled eggs with tofu. Curious? Give it a try!
1 tablespoon olive oil
1 small onion, chopped
1 large garlic clove, crushed
½ teaspoon saffron
1 tablespoon ground cumin
½ teaspoon sweet paprika
280g extra firm tofu
100g cherry tomatoes, halved
½ bunch chopped parsley
Rye bread, to serve, (optional)
1- Heat the olive oil in a pan over a low heat and gently fry the onion for eight to 10 minutes or until golden brown. Stir in the garlic, saffron, cumin and paprika and cook for another minute.
2- Mash the tofu in a bowl using a fork, keeping some thick pieces. Add to the pan and cook for three minutes. Increase the heat and add the tomatoes, cooking for another five minutes or until they begin to soften. Add the parsley to the mixture. Serve alone or with toasted rye bread, if you prefer.
