If you are short on time to cook this is the ideal meal.
Whether it’s for lunch, or for dinner, in those moments when laziness makes itself felt the will to cook disappears. Rice with tuna is a common solution, however, it is also very boring. So it’s best to take note of this recipe, suggested by BBC Good Food magazine. Just add a few ingredients and everything changes.
Ingredients:
900g cold cooked rice
400g tuna in water
200g peas
2 red peppers, peeled, seeded and diced
3 tomatoes cut into small pieces
5 spring onions, thinly sliced
1 bunch parsley, chopped
1 handful of pitted green olives, chopped
4 tablespoons of mayonnaise
Juice of 1 lemon
2 tablespoons extra virgin olive oil
Directions:
1- Place the rice in a large bowl. Add the tuna and mix the peas, peppers, tomatoes, scallions, parsley and olives.
2- Mix the mayonnaise, the lemon juice and the olive oil and season to taste. Serve and enjoy with the whole family.
